Spanish chef with 3 Michelin stars. He started his professional career as a chef in 1986. He started working in the kitchen when he was 14 years old, digging into books, most of them from French cooks with very different culinary lines to the ones he followed at the time. He therefore sows an inquisitiveness around food that goes beyond mere nutrition. When he was 18 years old he started visiting some of the best restaurants in Spain. He started working in what is now his restaurant in 1988, El Poblet, (currently Quique Dacosta Restaurante), which offered Castilian cuisine in its beginnings and then shifted to a local seafood offer. He starting creating an innovative cuisine from Alicante, Valencia and Spain.
